Redmine installation brittle, error prone and difficult

Hello,
I'm trying to install redmine on ubuntu 20.04 for days and found the installation:
- Error prone
- Brittle
- Logs which do not help
- Unclear structure of configuration files and directories
When I add email notifications for example, I get internal errors and logs which do definitely not help.
Installation instructions are unclear and hopelessly vague.
Is there a manual which:
- complies to latest version of redmine
- proven to work?
