1.0.0 RC?

I've just seen varying statements on what is 'stable'. For instance, under "Download" it calls the 1.0.0 version a 'stable' release, but yet RC is in the name.
Is the 1.0.0 considered 'stable' for production, or should I consider waiting for the 1.0.1 release?
We don't integrate with any source control, or have plugins.
Sorry if I'm asking something covered already.
