Custom field: Multiple answer question (checkboxes)

What's the best way to have a field / question that has multiple answers. The issue checklist plugin (http://redminecrm.com/projects/checklist/pages/1) doesn't work for me as it is set blank and so every single time I have to input the 40 questions.
I tried using the custom field > list > multiple values but it cuts off the text as the answer is too long.
What would be the best way to solve this, you think?
