Customizing drop down fields in Redmine

Hello,
I have installed and want to evaluate the redmine tool for my company.
I am trying to figure out how to easily customize redmine to better reflect my company needs.

One thing I was looking to modify was the "New Issue" page of a project.
I would like to change the "Tracker" drop down field so that it has different values rather than 'Bug', 'Feature', and 'Support'.

I have attached a screenshot of drop down field.

I tried searching the .erb fields but could not find where these values are defined.
I also looked at the database for redmine and could not find anything.

If anyone can help me I would appreciate it.
Also if anyone knows a good tutorial or website that details this it would help me alot.

Menu:
Administration -> Trackers.
