Adding Category Field to a New Ticket

Hi - brand new to Redmine and have a very basic question. I am able to add "Category" as a column to my tickets within the Issues tab. However I don't see any method of actually assigning a Category to a new or existing ticket? Any help would be appreciated. Thx
