Project planning in Redmine

Hi folks,
I'm keen to use Redmine for my project planning and resourcing and am wondering if there is any best-practice documentation for setting this up?
I'd like to set up a project with a start date and an end date. It seems like in order to do this I need to calculate the time of each small task in the project and enter an hourly estimate for each one. What is the best way to do this? Do I need to create top level tasks for planning, development, deploy etc... then create sub-tasks under these? Or are these sub projects?
There also doesn't seem to be a way to group multiple projects together by client. e.g. to report on all work done for a particular client in a week. Should I be setting up each client as a top level project, then each of their projects under that as a sub project? Is this a valid way of using Redmine?

You can make a custom field for your clients, and use it as a filter.
Depending on the type of field (numeric, list), you can also sort by using that field.
You dont really need to log all tasks beforehand, you can modify the time used on each individual task on the run, as you close/update their status.
