Company requirements for Redmine

Hello All,
I am with a small company that is looking to setup a issue tracking tool.
I am going to try out Redmine to get a feel for it however, I also am in the process of creating a requirements document to give out to various vendors of issue tracking tools to see if their tool can support our requirements.
It seems that there is no real POC for Redmine, so I am wondering what is the best way to go about this.
Anyone have a suggestion on how I should tackle this with Redmine tool? Are their 3rd party developers that can answer these questions or are they strictly for customizing the tool?
I am just not sure who associated with Redmine would be suitable for me to contact or if I just need to set it up and run through requirements which would be time consuming and might affect my dates.
Any advice would be appreciate. Apologies if this was not the right area to ask this question.

Redmine is free software, this site is not backed by any company.
Books on Redmine are available, they'll give you some starting points.
For general questions, use the forums and feel free to ask anything about Redmine.
Should you need large-scale advice on how to deploy Redmine in your organization, you should probably hire someone proficient in ruby.
