Remove non-required fields from New Issue Screen

Is there a way to remove the non-required fields from the "New Issue" entry screen.
I would like to setup this up so "Customers" can enter issues into the system. However I do not want them to be able to Assign the ticket, Set a due date, or estimate time.
In fact the only things I would like them to be able to enter would be:
Subject, Description, Status (Always New) and Priority. With the option to upload a file.
Is this possible? It seems since Assigned To, Due Date, Estimated time and % Done are not required that I should be able to "hide" them on the initial issue entry screen.
Is this possible?
