The person who created the Redmine for our project is MIA. The team is currently experiencing this error and no one is able to log in to our project. I'm at a loss - I don't even know where to start. Any help would be appreciated!

You need to have a look into the logs of your server to find the cause of this.
Likely, you need to check the webserver logs (depending on your operating system, webserver and setup, likely at /var/log/apache2/error.log
or /var/log/nginx/error.log
or other places). Maybe its best to find a person who knows their way around your server's operating system. They will likely be able to quickly figure out how passenger was configured and where its logs are.
If you have found a log entry, you may post it here and we may be able to go from there.
