You could add it to any of the menus (project menu, redmine menu, …), but that would require a patch or a custom plugin.

You can "watch" them and see that list either as a custom query or in "my page" when you're logged in.

Can I edit 'my page' for other users? I can log in as admin.

You can add other people as watchers to an issue with the correct permissions, you can't edit their "my page" though. Another idea might be to create a public custom query with the "watcher" filter set to "me": everyone will be able to use this custom query, and "me" will be the currently logged in user.
