Update from version 2.5.1 to current

Dear All,
I would like to ask about way/procedure to do an update from 2.5.1 to current one.
Is there any critical update what need to be done to reach currrent version, or simply can I install latest version?

we have discussed this several times on the forum.
Please note the RedmineUpgrade site.
In the best case, the upgrade works in one step - if not, the steps should be smaller (e.g. first to a version 3.x and then to 4.x)
Whether and how it works depends on so many factors, e.g.:
- Database type and version
- Use of plugins
Sorry, but it's going to be a "test and fail"...

It depends on plugins. Some of them will not work with newer versions of Redmine and have to be upgraded too. So, first see plugins compatibility with new Redmine. hen you have the new versions, you may upgrade. However, upgrade Redmine with physically removed obsolete plugins. Then put in plugins folder their new versions and upgrade them (migrate plugins).
About database - you may want to make a backup and import it in a new database (sqldump & import) -- change database name in config/database.yml.
About Redmine files. Copy the whole redmine folder in a new folder and make upgrades there.
About Ruby - your version is too old. You have to use newer ruby version for Redmine 5.x.x.
Act as safe as possible so as to keep your current installation.
